- Dry – cured Swedish ham from Bjärhus farm served with summer truffle, poached egg and an asparagus vinaigrette
- Beef variation: Fillet, cured brisket and grilled bone marrow served with a lukewarm crème of apple and horse radish and a ragout of sweet potatoes and onion

- Lemon flavoured shellfish stir on sourdough toast served with an apple and dill salad
- Herb baked corn-fed chicken served with a ragout of vegetables of the season and red wine gravy
- Small Crème Brûlée
